If I update matlab selecting only MATLAB and a toolbox that I'm interersted into, Will I keep the toolboxes I downloaded earlier?

Hi!
I need the signal processing toolbox, so I'm going to update matlab and add this toolbox. If I will select only matlab and signal processing toolbox, will I lose the other toolbox that I downloaded earlier (such as optimization toolbox, control system toolbox etc).

You can (and should) update everything for which you have a license. If you are adding a TB, you have to either purchase a license for it or you can (I think) download trial copies for a short time on top of a licensed product.
I'm pretty sure when you update to a new release you always get a new install, not just a refresh of a few files.
As always you can call TMW Sales and get confirmation on just what need to do and what is most cost-effective route.

If you purchase a new matlab license then it will not have access to other toolboxes. Toolboxes are associated with a license, not with a user.
If you have a previous version of MATLAB and you have an active support contract then upgrade to r2021b and then purchase the toolbox. In this case, where you are not purchasing a new licence, the previous toolboxes will continue on.
If you have a previous version of MATLAB but your support contract has expired, then depending how long ago it expired, Mathworks might permit you to pay the cost of the support contract for the years you missed, after which your licence would be current and you would be able to purchase the toolbox. The rule used to be that you could back-pay 4 years. As the cost of support contracts used to be approximately 20 percent per year, paying retroactively for up to 4 years used to be less expensive than buying a new licence.

I'm a student and actually I'm using matlab2020b. So you're saying that if I don't change license, I can upgrade to r2021b and download only MATLAB and the signal processing toolbox because the other toolbox dowloaded with matlabr2020b will work as well?

No, toolboxes will not (reliably) work with any other version. If you want to use the other toolboxes with the new release then you need to install them as well.

When you use the Add-on explorer, you can type in the toolbox you want to get. If I remember correctly, you should get a list with checkboxes for all the things you have installed, including toolboxes you have purchased and other "free" extra things you have downloaded. Then you can check or uncheck what you want to have. So if you leave all your current toolboxes checked, then yes, you will retain them. So this means that you can essentially selectively uninstall and reinstall individual toolboxes this way.
