This question is really quite general and so it's difficult to give a definitive answer. If you open the Solutions page linked at the top of this page (and most pages on the MathWorks website) you can look at some of the applications, industries, disciplines, and capabilities where MathWorks products are used. Find an entry that looks like the area in which you're interested and read through it. Most of these should have links to user stories, detailing how actual users have used our products, and those user stories state which products were used in those scenarios. Or you could directly search the User Stories page if you know of a company working in your desired area.
For example, in the "Rolling stock and locomotives" section on the Railway Systems page the first "Learn More" entry is a user story that describes how Alstom generated production code for safety-critical power converter control systems using MATLAB, Simulink, Control System Toolbox, Embedded Coder, Simscape Electrical, Simulink Coder, and Stateflow.
