John is right - what do you expect? If you only take the topic of engines. It is possible in this field that you deal with:
  1. PDE's ,
  2. Optimization,
  3. Data-Fitting,
  4. Control,
  5. Vibration Analysis...
which is only a small part of the possible things you might have to need to know when building engines...
So if you ask this way the answer will be everything or nothing. Im pretty sure that there are a lot of engineers at the engine appartment of Volkswagen and BMW who never wrote one line of Matlab code - there will be also a lot of engineers working with this tools in very different ways.
So there is not a one and only valid answer on your question - it depends highly on the specific task which you are dealing with.

Your question is extremely general, so it's hard to give a specific answer. One resource that may help give you some topics to explore is the Automotive solutions page on the MathWorks website. That links to videos, user stories, and technical articles where users and MathWorks employees talk about using MathWorks products in the automotive space at a high level.
