How to set 'shading' to 'interp' on a specific plot within a figure

I am trying to create a figure with multiple types of plots within it, I have a surf plot in the figure which I would like to apply 'shading interp', however if I try to just add the line 'shading interp' I receive the error 'Error creating or updating Patch' and it does not plot. However simply applying this to a plot of only the surf does work, is there a way I can specify I only want to change the shading on specific plots inside a figure?

Record the handle of the surf:
sh = surf(....);
then
set(sh, 'EdgeColor', 'interp', 'FaceColor', 'interp');
