Using edge detection to find map the pore structure of char

Hello:

I'm trying to map the pore structure in the following char image. Do you have any suggestions on how to use the edge detection to do this? I'm having trouble getting a good resolution on the detection. Maybe I need to produce better images?

I think inorder to produce better edges, you may need better images also. If you have control over the image acquisition environment I will advise you to capture better images. Better images in the sense not in terms of the resolution (you already have a good resolution image!), but may be sharp and properly lit images. The image you have shared is blurred (especially on the left side) and the light from top produces undesired shadows. You may need to capture it with a tripod and a flash.
