I am doing a project on determining the qulality of rice seeds using image processing. How do I measure the length, breadth, eccentricity etc of the grain using the image of the grains as an input?

I am given a task to determine the quality of rice seeds. I'll be taking various features into consideration namely the colour, length, breasth,eccentricity etc of the rice seeds. How do I measure the physical parameters from an image?
