how to high mean value in binary image?

this my ExG binary image but the image does not give a better visual of greenness its also show straw in the background but this method gives better mean result compare to other methods which give a better visualization of greenness.

what should i do that gives high mean result.

sir, I want to know if my image gives good visualization in greenness.
what does it mean it will give low mean value or high mean value?
and how to calculate greenness in the binary image?

As per your comments, what I have understood, more mean more greenary?
Right?
If this is the case, if more greenary is there in the image, then only you will get more white pixels (more mean, because you are segmenting greeny pixels) on the segmented image.
Please do clarify?
