I would like to tell the MATLAB installer to use a different installation of java than it comes packaged with. How would I do this? What is the default java it uses?

To change the java version the installer uses, you need to add the following flag to the installer:
-javadir <directory>
(Where <directory> is, put the full path to your java installation folder.)
For example,
On Windows:
setup.exe -javadir "C:\Program Files\Java\jre6"
On Mac:
./install -javadir /Library/Java/JavaVirtualMachines/jdk1.7.0_45.jdk/Contents/Home -v
On Linux:
./install -javadir /usr/lib/jvm/jre-1.6.0-openjdk.x86_64/
If the flag isn’t used, the default java shipped with the installer is used:
-javadir <installer>/java/jre/$ARCH/jre/
(where <installer> is the location of the installation files, and $ARCH is the architecture, win32 for example)
