plot an array with different colors for the height

I have an array of data which I currently plot using bar3. Now I want to use the height information as an indication for color: i.e. at low values (0) blue changing to high values (1) red (or something similar). How would I go about doing this?

I have a picture attached of what I currently have. I want to be able change the coloring work long the z axis.
