Is it possible that the datasheet you are trying to export is too large to fit into an Excel spreadsheet? The Excel specification limits the number of rows to 1,048,576. You could work around this row limit by saving the data to a comma-separted CSV file. As far as I know, however, Excel will still impose the row limit when you try to import large files. There may be advanced import options in Excel to create multiple spreadsheets, or you could use a different program, but I am not familiar with those. MATLAB and SimBiology have data analysis and visualization tools. I am happy to try to find a solution within MATLAB if you share what kind of analysis you want to do.
Here are two examples for how you could export the data to CSV files. The first example describes how to export samples and the second example describes how to export simulation results to CSV files:
Export samples to CSV
To export samples (type SimBiology.Scenarios), you have to export the samples to the MATLAB Command Window. You can do this in the SimBiology Model Analyzer in the Browser panel by right-clicking on the "samples" variable under "LastRun" (or choose your saved program run). Then select "Export Data to MATLAB Workspace...". In the MATLAB Command Window you can use writetable to write the data to a CSV file:
>> writetable(generate(samples), "samples.csv");
This command will create the comma-separated file samples.csv in the current folder. Note that this will overwrite samples.csv in your current folder if it already exists. Here is the documenation for writetable that contains more details.
Export simulation results to CSV
To export simulation data (type SimData), you need to export the "results" variable under "LastRun" (or choose your saved program run) from within the SimBiology Model Analyzer by right-clicking on the "results" variable. Then again select "Export Data to MATLAB Workspace...". Here is a script you can run in the MATLAB Command Window to write the simulation results to a CSV file:

This script will create the comma-separated file results.csv in the current folder. Note that this command will overwrite results.csv in your current folder if it already exists. Here is the documenation for writematrix that contains more details.
