Learning to create climate data maps

Hi
I am interested in learning how to plot geospatial climate data maps with country borders and axes. I am a bit overwhelmed with all the resources online and a lot of the resoruces I am finding online are using a very old version of MATLAB or there is so much variety in content I cannot decide which to follow. I have attached an example of the sort of mapI want to be able to plot. I just want to be able to take various climate data I find online and plot it with proper axes and borders. I can do produce simple figures of data I find online (GEOTIFFs, shp etc.) but nothing with borders and lat/lon axes etc.
Could anyone recommend a good online resource (maybe a video tutorial or workshop or course) that could teach me to create climate data maps?

There's a good number of resources.
I use M_Map for all mapping pruposes in my projects and research work. Here's the link - https://www.eoas.ubc.ca/~rich/map.html
There's another called the Climate Data Toolbox by Chad Greene, this one's a gem for all climate related work. Much needed toolbox to start off with- https://in.mathworks.com/matlabcentral/fileexchange/70338-climate-data-toolbox-for-matlab
The above should be good bases to work with, as they has dozens of examples and codesto guide you. Hope this helps!
