Error estimation during converting point cloud to STL file

I have a 3D point cloud of a topography and I convert it to STL file format by means of this function in MATLAB:

surf2solid - make a solid volume from a surface for 3D printing

Now, I assume, there must be some error induced when it tries to triangulates this gridded data into a surface using triangulation.

Is there a way to have an estimate over this error?

Like, how a 1D profile of the original data is different with the returned solid(with faces and vertices) if we plot both in a figure?

How can I plot a 1D line profile of the returned solid (with faces and vertices) in order to compare it with the original?
