which type of image conversion have low occupy the CPU & Memory ? gray 2 Lab or ?

Not sure why you're asking. How big are your images? For normal sized images I wouldn't worry about it. I'd just use rgb2lab to convert RGB images into LAB images. For a gray image there is no A and B image and the L image is the same as the gray image.

To turn a gray scale image into a color RGB image you can use
rgbImage = cat(3, grayImage, grayImage, grayImage);
or, if you have a colormap you can use ind2rgb
rgbImage = ind2rgb(grayImage, yourColorMap);
What is your concern about low CPU usage?
