How do I interpolate 3 variables to create a scatter plot?

Hello everyone! I have 3 variables: frequency, amplitude and reflection coefficient in form of 41x10 arrays.
Now I would need to interpolate those reflection coefficients in smaller gaps of frequencies and amplitudes (i.e. 10 Hz instead of 20 Hz) in order to increase the resolution of my scatter plot.
Can someone help me?

it seems not so easy using that. I do not have monotonically increasing variables.

griddata and then sample at the appropriate grid locations
