How to fill the grid matrix?

Hi all,
I extracted the data from files sequentially. The aim is ordering the values by the grid points; in the grid file, I have n number of grid points (two vectors each has a dim of 987*1 Latitude and Longitude), which I need to fill in with my data by order. I need to read each of my longitude and latitude my files and order them as the grid points.
I mean, every hour of my data represents as one column of the big matrix. Then, you read each long and lat of the hourly file, as above, to find which position is that in the grid matrix (987 points) and fill it at that line in my matrix.
thank you for your help in advance.

t = readtable('YourFileName.txt');
data = reshape( t{:,:}, 987, [], size(t,2) );
