3D plotting and interpolation

I have three data matrices, X, Y, and Z, where X is a 8x1 matrix, Y is a 8x1 matrix, and Z is 8x8 matrix. Z(1,1) is the data that is propagated by X(1), Y(1) (e.g., X(1) is 5% Cold Work, Y(1) is 220 degree annealing temperature, and Z(1,1) is the hardness that results). How do I make a 3D plot of this? Should look like this:3DPlot.PNG

That is how the plots as shown are done. YOu have X 8*1, Y 8*1 and Z 8*8.....surf works.
