What are strategies for coding real time audio analysis?

In real time algorithms, DSP is almost always done in loops and iteration and you can never "see into the future." In matlab, I'm working with a matrix that represents an audio file that represents a live signal and it feels like theres a danger of coding something that "sees into the futre"
What are the strategies to coding audio algorithms in matlab so seeing into the future or looking too far into the past doesn't happen? Put another way, Is there a way of defining "signal flow" rather than matrix math? I would never FFT an entire audio stream in real life since it defies definitions.
I hope this is clear enough from a beginner.

Simulink has a Real-Time Audio System Toolbox.
This would be a good place to start exploring on real time audio analasys.
