surfacefit vs surrogate models

Hello Everyone,

this might be a dumb questions but I´m wondering what the advantage of a surrogate modeling technique ( like kriging, radial basis funciton ,...) is if I want to create a response surface for scattered experimental data over the simple surface fit function in matlab ? I guess you have more control over the fitting process itself but does also the accuracy improve in regions with only few data points ?
