How to sample an continuous ECG signal, plot from excel sheet data in Matlab. Data is in 2 row and 500 column form.

Calculate the fft of your signal, then deduce approximately the highest frequency fmax of your signal
The sample frequency should be >= 2*fmax

By definition, continuous signals have infinite density, like the "real number line". If you have a finite set of measurements of a signal in an xls file, then you have sampled measurements, not a continuous signal.

If the signal is oversampled, we can consider that those samples represent a continuous signal that we should sample again.
