Hello, So, I am trying to use a slider to manipulate the sobel filter to modify an image. The problem is I have no clue how sobel works whatsoever. I am pretty much still new to matlab, but I would appreciate if someone can at least explain how sobel works. Thank you.

http://homepages.inf.ed.ac.uk/rbf/HIPR2/sobel.htm is a good introduction to the Sobel filter. It is essentially a Laplacian of Gaussian (LOG) filter which detects edges in your input image. http://www.mathworks.com/help/images/analyzing-images.html#f11-12512 may also help.

The standard Sobel filter is done by the imgradient() function. That's a 3-by-3 filter. If you want to modify it, then you can choose a different size filter by using a LOG or DOG filter and conv2() or imfilter().
