can one create an exe or *.m file in matlab,wherein the sorce code remains safe with the programmer,unknown to the user

You can compile your m-file to .p file.

You can also compile your m-file to .exe file if you have the Matlab Compiler Toolbox.

do programs based on image processing also get compiled to *.exe

It should. You may need to deploy some supporting files along with the compiled .exe file. The deploytool GUI may help you to do that.
