Image Processing using computer vision/ To determine whether the mixture is completely mixed

Hi,

I am trying to using image processing techniques to understand whether the dry ingredients are completely mixed.I used covariance matrix and Variablity% and compare the pixel data but I am not seeing any promising results. And as you see the images have salt and pepper noise for which i tried some filters but not able to eliminate the noise comepletely.

Could you please suggest any other alternative approach and advance filters to eliminate the noise,
