How to create new variables

I now calculate this program.
options = optimoptions('fmincon', 'Display','iter','Algorithm','interior-point');
[x,fval] = fmincon(@(x)mindistance(x,x0),x0,A,b,Aeq,beq,lb,[],[],options)
I want to create new variables for example, x,x0,etc. Please tell me how to do it.

eval('x=0')?
